Honey Bran Muffins
These are delicious, moist bran muffins. Prepare the batter the night before, then pop the muffins into the oven and let them bake while you get ready for work. Calories, fat and cholesterol were reduce by:
Replacing butter with baby food prunes.
Using egg whites instead of a whole egg.

1 cup 100% bran cereal (such as Kellogg's Bran Buds or Nabisco 100% Bran)
3/4 cup all purpose flour
1/4 cup sugar
1 teaspoon baking soda
2 egg whites, lightly beaten
1/3 cup honey
1 (2 1/2-ounce) jar baby food prunes
3 tablespoons molasses
1 cup buttermilk
1/2 cup raisins
In a large bowl, stir together the creal, flour, sugar and baking soda. Make a well in the center of the mixture.
In a small bowl, stir together the egg whites, honey, prunes, molasses and buttermilk. Add the prune mixture to the flour mixture and stir just until moistened. Fold in the raisins. Transfer the batter to an airtight container. Seal and refrigerate overnight.
To bake the muffins, preheat the oven to 375 degrees F. Spray six large, 3-inch muffin cups with no-stick spray. Spoon the batter into the prepared cups, filling each 3/4 full. Bake for 20 to 23 minutes or until a toothpick inserted in the center comes out clean. Cool the muffins in the muffin cups for 5 minutes. Then remove the muffins and cool on a wire rack.
Make 6 large muffins.
NOTE: To make standard-sized muffins, spray twelve 2 1/2-inch muffin cups with no-stick spray. Spoon the batter into the cups, filling each 3/4 full. Bake for 16 to 19 minutes or until done. Cool as directed above. Per standard-sized muffin: 141 calories.
