Recipe(tried): How to Dry Persimmons
Misc.I haven't dried the crisp ones myself yet but the friend who did just sliced them in thin rings and put them in the dehydrator (actually she uses a convection oven with the fan on at its lowest heat). They were beautiful - she did no other preparation or brining or sugaring. They came out slightly leathery, not crunchy crisp, and can be eaten right out of the bag without reconstituting.
I've dried the soft persimmons even though the book with my dehydrator says to use the crisp ones. The soft ones dry into a "fruit leather" like snack - not real dry, and I store them in the refrigerator. I don't brine them either - just slice very ripe ones as thin as possible and dry for about 24 hours. But when I tasted my friend's dried Fuyus I thoght they were even better.
