Recipe: How to Roast Fresh Ham

Fresh Ham (not smoked or cured) Cooking Instructions

Preheat oven to 350 degrees. Season to taste and place fat side up in a covered baking dish, or wrap in foil and place in a pan to catch drippings. Cook roast for 25 minutes a pound, which is 7 1/2-8 1/2 hours, depending on the size of the roast. Roast is fully cooked when the internal temperature reaches 160-165 degrees. Remove roast from oven and let stand several minutes before carving. Oven temperatures vary, so adjust cooking time accordingly.

SERVING TIP: For slicing ease, carve roast into 1/8" slices carefully working around the bone. Save any juice that is in the pan after cooking for a delicious au jus to pour over the slices! Serve immediately.
