Recipe: Hungarian Tomato Soup for Cheryl posting of 11-02-98
Misc.Hi Cheryl...I finally found this, and only this one, in my Hungarian Cookbooks, it sounds similar to what you are seeking...if not 'exactly' let me know and I'll keep trying in my other books!
HUNGARIAN TOMATO SOUP from the First Hungarian Reformed Church
Mrs. Ozsvath
1 quart (4 cups) tomato juice
1 quart (4 cups) water
2 lb. potatoes or as much as you like
3 level measuring spoons flour
1 pint (2 cups) half and half
2 Tablespoons sour cream
1 pint (2 cups) milk
Salt and a little sugar to tate
Clean and cube potatoes. Cook in salted water. Mix tomatoe juice and water in large enough pot to combine all ingredients. Work flour and sour cream to a smooth paste; adding half and half and milk slowly; add to tomato juice and bring to a boil, stirring constantly. Cook about 5 minutes; add cooked potatoes and keep cooking until it (again) comes to a boil. Boil slowly for another 5 minutes.
If too thick, add a little more milk.
p.s. My Hungarian friend's mother (now deceased) used to make this, and she also sprinkled Sweet Hungarian Paprika on top; the soup had a lovely pinkish color and so good; warmed the soul!
