Adapted from: A Taste of Puerto Rico Cookbook by Angela Spenceley
Servings: 6
lemon juice from 3 lemons
1/2 cup rum
3 cloves garlic, minced
1 teaspoon oregano
3 pounds chicken breasts, cut up
1/4 cup oil
1 cup flour
salt and pepper
Combine rum, lemon juice, garlic, and oregano. Add the chicken and marinate for 1/2 hour.
Heat the oil in a skillet.
Place flour in a shallow dish and season with salt and pepper.
Remove chicken from the marinade and dredge in the seasoned flour.
Fry in hot oil until done.
