Recipe: Hunt's Bacon Basil and Tomato Salad (bread salad using canned diced tomatoes)

HUNT'S BACON BASIL AND TOMATO SALAD

2 cups country white bread, cut into 1/2 inch cubes
1 large clove garlic, minced
3 tablespoon olive oil, divided use
1 (28 oz) can Hunt's Diced Tomatoes, drained
1/2 cup diced mozzarella cheese
1/2 cup chopped fresh basil
4 strips bacon, cooked and crumbled
1/4 cup balsamic vinegar
Salt and ground black pepper to taste

Brown bread cubes and garlic in 1 tbsp of hot oil until lightly golden. Set aside.

Arrange tomatoes in center of serving dish. Sprinkle with cheese, basil and bacon.

Whisk remaining oil and vinegar; drizzle over salad. Sprinkle with bread cubes.
