Recipe: Husband's Cake with Orange Frosting (using baby food) - Recipe for Sherrille

2 cups sugar
1 1/2 cups oil
4 eggs
2 1/2 cups flour
1/2 cup unsweetened cocoa powder
2 teaspoons baking soda
2 teaspoons salt
4 jars (4 1/2 ounce each) baby-food strained beets (or strained plums)
2 teaspoons vanilla
Orange Frosting (recipe follows)
Preheat oven to 350 degrees F. Grease a 13x9x2-inch baking pan.
Mix sugar, oil and eggs together thoroughly with a mixer; set aside.
In a separate bowl, stir together flour, cocoa, baking soda, and salt. Add dry ingredients alternately with the baby food to the oil and egg mixture. Add vanilla. Pour into prepared pan.
Bake in 350 degree F oven for 25-30 minutes or until cake tests done. Cool completely, then frost with Orange Frosting.

ORANGE FROSTING
2 packages (3 ounces each) cream cheese, softened
2 tablespoons orange juice
1 tablespoon grated orange rind
5 1/2 cups sifted powdered sugar (as needed)
Mix cream cheese, orange juice and orange rind together. Gradually add sifted powdered sugar until spreading consistency. Use to frost cooled cake.
