Healthy Tofu Chocolate "Ice Cream"
use vegan versions of:
one package silken tofu (16 oz)
4 tablespoons unsweetened cocoa powder
12 packets of vegan sugar substitue or 3/4 cup of vegan sugar
vanilla extract to taste
Put all the ingredients into a blender and blenderize until smooth!! Taste test the mix, add more vegan sugar, chocolate or vanilla if needed. Put into freezer safe container and freeze to desired consistency. (I like to freeze mine until it is hard and then soften it a bit in the microwave). This is really good and really healthy!!!!
Nutrition info for 1/4 (made with vegan sugar substitute) (varies by brand of tofu): 70 calories, 3 grams of fat, 6 grams of protein

Banana 'Ice Cream'
Use vegan versions of:
4 Perfectly ripe frozen bananas
1/2 cup soymilk or fruit juice of your choice
Directions:
Peel bananas and cut in rounds. Place on cookie sheet and freeze. Put the frozen fruit in a food processor and using the steel blade process while slowly adding the liquid. You may use more or less liquid as you desire. Less liquid gives you a 'soft serve' consistency, and more gets you a 'shake'. Try using combinations of other frozen fruits for variety. This is best when used right away. Always thaw before serving if you have left overs. If you keep a supply of frozen fruit on hand, you can make this treat on a moments notice.

Coconut Ice Cream
Use vegan versions of:
1 can coconut milk (not the reduced fat kind)
1 block silken tofu
1/3 cup organic vegan sugar or to taste
1 Tbsp vanilla extract
In blender combine coconut milk and tofu, vegan sugar and vanilla. Mix well. Test for sweetness and add more if desired. Put in ice cream machine. Try one or more of these additions:
1/3 to 1/2 cup toasted coconut pineapple chunks macadamia nuts chocolate chips
Special Occasion Strawberry Ice Cream
Use vegan versions of:
3 (12 oz each) pkgs soft silken Mori-Nu tofu
2 cups fructose
1 cup oil
1/8 cup lemon juice
2 (16 oz each) pkgs frozen strawberries
2 tablespoon vanilla
1/4 teaspoon salt
Blend together and freeze in ice cream maker.
