Recipe: Rolled Oat Burgers (using onion, carrot, celery and peppers, make ahead)

ROLLED OAT BURGERS

2 cups water
2 cup old-fashioned rolled oats, uncooked
2 tbsp low-sodium tamari or soy sauce
1 tbsp plus 2 tsp olive oil, divided use
1 cup diced onion
1/2 cup grated carrots
1/2 cup diced celery
1/2 cup diced red bell peppers
2 cloves garlic, minced
2 tsp dried oregano
6 leaves fresh basil, minced
1/2 tsp fresh ground black pepper

Bring water to a boil in a saucepan over medium-high heat. Add oats, tamari or soy sauce and 1 tablespoon olive oil. Reduce heat to low and cook 2 minutes; remove from heat and set aside.

In skillet, heat the remaining 2 teaspoons olive oil over medium heat. Add rest of ingredients and saute 2 minutes or until vegetables are softened.

Add the cooked oats and combined well. Chill at least 2 hours or overnight.

Preheat oven to 375 degrees F.

Using an ice cream scoop (1/4 cup), portion mixture. Form each portion into a ball and flatten slightly. Place on a lightly oiled baking sheet.

Bake 20 minutes until golden brown.

Makes 16 patties
