Misc.from my mother. It was the first thing she cooked for Dad as a new bride (in 1919).
Rinse in boiling water (unless you like it real salty) a jar or other quantity of dried beef. Drain and pat dry a little.
Melt in saute pan 1 T. (or more) butter or marge. Frizzle (or saute) the beef in it until hot. Sift over top (I use my tea strainer) about 1 T. flour. Stir and cook slowly until the flour is incorporated with the butter. Pour over slowly about 1 cup milk, stirring, and cook until a white sauce is binding everything together.
You adjust the amounts of butter, flour and milk to accommodate your quantity of beef or to make the sauce thinner or thicker, to your taste.
As you can see, it is not really a recipe, but a METHOD. I season only with freshly ground pepper, as the beef is salty enough! Serve over toast, rice or mashed potatoes.
Our family joke (which is true!) is that Daddy was so in love he raved about this dish. So Mother served it night after night until he screamed "ENOUGH!!!"
