I know of a similar tri-color cookie that goes by many names: Rainbow Cookies, Seven-Layer Cookies, Venetian Cookies, Neapolitan Cookies, Italian Tri-Color Jelly Cookies

Most of these cookies contain marzipan/almond paste or almond extract. Instead of the currant jelly, people generally use raspberry jam or apricot jam in the above cookies. Also, these cookies are coated in semi-sweet chocolate. Is it possible your Mom just made them into 6 layers, added some of her own touches like the sour cream and walnuts and removed the raspberry jam and dark chocolate and replaced them with her preferences?

Anyway, I know there is a Seven-Layer Cookie on recipelink. If you search the internet, they are listed under the above names.
