Recipe: Jackie Olden's Quick Cinnamon Rolls (using yeast, one rise)

QUICK CINNAMON ROLLS

1/2 cup hot milk
3 tablespoons shortening
3 tablespoons granulated sugar
1 1/2 teaspoons salt
1 envelope active dry yeast
1/2 cup warm water
1 egg, lightly beaten
3 1/4 cups pre-sifted flour
Softened butter, brown sugar and ground cinnamon (for the filling)

Grease a 13x9x2-inch baking pan.

In a mixing bowl combine milk, shortening, sugar and salt.

Soften yeast in water. Add to milk mixture. Add egg. Stir in flour to make a soft dough. Turn onto lightly floured board. Knead lightly until smooth.

Roll out dough into a rectangle. Spread with butter, sprinkle with brown sugar and cinnamon. Roll up lengthwise like a jelly roll. Cut into 1-inch thick slices. Arrange in the prepared pan. Let rise for about 1 hour.

Preheat oven to 350 degrees F.

Bake for about 30 minutes.

Makes 24 rolls
