Recipe(tried): Jalapeno Armadillo Eggs

I don't how these got the name of Armadillo Eggs, but they are good.
Split peppers in half thru stem(leave stem on). Take out seeds and stuff with ground sausage - hot or mild, depending on your taste. Press stuffed side in chicken coating mix - like Shake N Bake. Put on cookie sheet-bake 350 20-30 minutes. Very EASY and very GOOD
