Recipe: Jalapeno Corn Bread, Shortcut Sourdough Corn Bread, Corn Meal Herb Bread, Corn Muffin Bread (bread machine)

Makes 1-pound loaf
1 1/2 teaspoons active dry yeast
1/2 cup warm water (110 degrees F)
1 tablespoon butter or margarine
1 1/3 cups bread flour
1/2 cup corn meal
1 tablespoon white sugar
1 teaspoon salt
3/4 cup frozen whole kernel corn, thawed
3 to 4 teaspoons chopped jalapeno peppers
Place ingredients in bread machine pan in the order recommended by the manufacturer. Add the peppers and whole kernel corn during the raisin mode if your bread machine has one. Select basic bread setting. Start.

Shortcut Sourdough Corn Bread

Makes one 1 1/2 lb. loaf
2/3 cup Plain low-fat yogurt
1/3 cup Milk
1 tablespoon Butter or margarine
1 teaspoon Salt
2 3/4 cups Bread flour
1/2 cup Cornmeal
1 tablespoon Sugar
2 teaspoons Bread machine yeast
Add ingredients to machine in order given by manufacturer, adding the yogurt with the milk.
Basic/white bread cycle. Medium/normal color setting.
Yogurt is the secret ingredient that gives the tang reminiscent of sourdough.
NOTE: Yogurt varies in moisture content. If dough is too stiff or dry, add some milk. If too soft or slack, add some flour.

Corn Meal Herb Bread

1 pkg (5/16-oz) yeast
1 tbsp vegetable oil
1 cup unbleached flour
1 tsp salt
3/4 cup bread flour
1 tbsp sugar
1/2 cup white or yellow cornmeal
7/8 cup water
4 tbsp fresh, chopped herbs*
Chives, cilantro, Italian parsley, or basil, OR 4 teaspoons dry herbs.
Put all ingredients, in the order given, into the bread machine, select WHITE bread, and push Start. Serve warm with sweet butter. Makes 1 loaf, 8 slices.

Serving Size : 8
3/4 cup water -- or more
1 tsp lemon juice
3 Tbs. powdered milk (have used reg. &
buttermilk)
1 tsp salt
1 1/2 Tbsp. Crisco (used plain)
2 Tbsp sugar
2 Cups bread flour
1/2 Cup cornmeal
1 1/2 tsp yeast (used SAF)
Add ingredients in order per mfg. instructions. Bake on basic cycle. (I used medium crust and it's been a nice golden brown both times).
