Recipe: Jam from canned fruit

Normally canned fruit is not used in making jams because you have no way of knowing how much sugar is in them.
You can make a freezer jam using a product called Clear jell that would probalby work. You order it online. Some Amish stores carry it in bulk. You will need the instant Clear Jell, not the cooked for this purpose.
Also, possibly Pomonas Universal pectin would work,too. You can make low sugar, no sugar, or regular type jams with it. You can find them online.

5 cups mashed fruit -- any kind
1/2 cup light corn syrup
2 cups sugar -- or to taste
3 tablespoons Instant ClearJel -- more if necessary

Sift ClearJel and sugar twice. (ClearJel will lump if not well-mixed with sugar.) Pour into fruit and add corn syrup. Mix well and pour into freezer containers.

NOTES: You can use fresh, canned, or frozen fruit, any combination. Thicken a little more for a great cake filling (favorites are sugar, ClearJel, lemon juice and water; or raspberry puree, thickened and sweetened).
