SPICED SHRIMP KABOBS
1 (8 1/4 oz.) can pineapple chunks in heavy syrup
1 tbsp. salad oil
3 medium cloves garlic, crushed
1/8 tsp, ground ginger
1/8 tsp. ground turmeric
1 tbsp. tomato paste
1/2 lb. shrimp, peeled and deveined
1/2 tsp, salt
1 tbsp. lime juice
Dash hot-red-pepper sauce
Drain pineapple; reserve 1/4 cup syrup.
In skillet, heat oil over medium-high heat. Saute garlic, spices and tomato paste 2 minutes.
Add shrimp; saute 2 minutes.
Stir in pineapple syrup and remaining ingredients; boil.
Add pineapple; place in bowl. Accompany with picks to make kebabs.
Makes 4 servings
