Recipe: Jerked Chicken Sandwiches (using chicken thighs) (crock pot)
SandwichesJERKED CHICKEN SANDWICHES
3 tablespoons Caribbean jerk seasoning
1 1/2 pounds boneless skinless chicken thighs
1 large green or red bell pepper, chopped
1 medium onion, chopped
1/2 cup chicken broth
1/4 cup ketchup
6 hoagie rolls, split
Rub jerk seasoning generously over chicken thighs.
Place bell pepper and onion in bottom of crock pot. Place chicken over vegetables.
In small bowl, combine broth and ketchup; mix well. Pour broth mixture over chicken.
Cover; cook on low for 6 to 8 hours.
TO SERVE:
Remove chicken from slow cooker. Shred chicken; return to slow cooker and mix well. With slotted spoon, spoon chicken and vegetable mixture into buns.
