Persimmon Cookies
Yields 3 dozen

3/4 to 1 cup persimmons
1/4 tsp. baking soda
3/4 cup sugar
1/4 cup shortening
1 1/2 cups flour
1/4 tsp. salt
3/4 tsp. cinnamon
3/4 tsp. ground cloves
3/4 tsp. nutmeg
3/4 cup raisins
3/4 cup nuts, chopped (optional)

Peel persimmons. Mash, leaving pulpy and not too thin of a consistency. Mix soda with persimmons and set aside. Blend sugar and shortening. Mix all dry ingredients together and add to sugar mixture. Blend in persimmon mixture. Add raisins and nuts. Drop by teaspoonsful on greased cookie sheet about 2 inches apart.
