Title: KASHMIRI CURRIED PRAWNS

Yield: 4 Servings

1 md Onion, sliced
2 Garlic clove, crushed
1 Green chilli, finely chopped
2 t Oil
4 t Curry powder
1 Green bell pepper, diced
1 c + 2T Fish stock
8 oz Canned chopped tomatoes
Hot cooked rice
15 1/2 oz Can pineapple pieces, drained
1 oz Creamed coconut, chopped
5 1/2 oz Peeled prawns(shrimp)
Freshly ground black pepper
Fresh parsley
Fresh chives

Heat oil in non-stick pan, then add onion & garlic. Cover & cook
over low heat till onion is soft. Stir in chilli & curry powder,
then cook 1min. Add bell pepper, stock & tomatoes. Bring to boil &
simmer, uncovered 15mins till juices thicken a little. Add
pineapple, coconut & prawns. Cook stirring all the time, for 5mins
till coconut has dissolved & prawns have heated through. Season to
taste. Serve on a bed of rice garnished with parsley & chives.MMMMM
