KNEUCHEN STUNGLE / WALNUT STICKS
This recipe came from my husbands grandmother. They are a favorite cookie and well worth the time put into them. There's a lot of love that go into these that isn't listed in the ingredients.
Lightly grease cookie sheets. Preheat oven to 200 degrees F.
3 cups ground walnuts
1/2 cup bread crumbs
3/4 cup sugar
1/2 tsp. ground cinnamon
1/2 tsp. lemon juice
1 egg
2 egg yolks
Mix all ingredients well and roll to a 1/2-inch even thickness by hand; set aside.
ICING:
2 egg whites
2/3 cup sugar
1 tsp. vanilla extract
1Tbsp. lemon juice
Beat ingredients for the icing together until firm stiff peaks form.
Cut dough into finger width pieces / top with icing
Put on lightly greased cookie sheets, put in 200 degree F preheated oven with door slightly open for about 2 hours.
OLD SCHOOL OPTION:
Preheat oven to 325 degrees then turn off oven and leave cookies in overnight. / 8 hours if baking by day.
This is how the recipe read on paper but I think, in practice, she heated the oven to 250 degrees before turning off and leaving them in overnight. If going with the 325 I'm pretty sure she left the door cracked open.
LEFT OVER MERINGUE:
Preheat oven to 350 degrees F.
On greased baking sheets.. drop tsp dollops of the meringue onto baking sheet .. Bake for 15 minutes.
