Recipe: LASAGNA BIANCO (WHITE SAUCE)

Here's my mom's recipe for Lasagna Bianco Con (whatever you like)
this means: White lasagna with (whatever you like!)
READ ALL THE WAY THROUGH FIRST.......
The Bechamel:
Melt 6 tbsp. butter in large cold saucepan on low heat, with whisk, blend in 6 tbsp. flour and stir until incorporated, add 5 cups milk slowly stirring and cooking until thick - add dash of nutmeg, dash salt, dash pepper, whisk in l cup parmesan cheese.. In a separate bowl, mix l pound ricotta cheese with l egg and 1 tbsp. fresh parsley chopped very fine.
Cook l lb lasagna noodles, according to directions on box, grease or spray a lasagna dish or pan and layer in this order, noodles, sauce, "dots" of ricotta mixture...and mozzarella if you like...bake at 350 about 30 minutes covered with foil..
Notes: what makes this so versatile is, you can add leftover chicken, turkey, mixed vegetables, broccoli, frozen peas...and it goes on and on....capers..mushrooms....
If your bechamel seems too "thick" okay to thin with milk or cream..
