CRANBERRY ORANGE RELISH
Source: Cooking for Comfort: More Than 100 Wonderful Recipes That Are as Satisfying to Cook as They Are to Eat by Marian Burros
Makes about 3 cups
I must have cranberries at Thanksgiving dinner. When the turkey is dry, the cranberry sauce makes it go down more easily and actually makes is taste good. It's the tartness of this recipe that I find so appealing, a very strong contrast to the usual dishes on a Thanksgiving table.
2 cups fresh cranberries
2 oranges, pitted, peel removed from 1 orange
6 heaping tablespoons toasted chopped p
6 tablespoons dried cranberries
6 tablespoons maple syrup
2 tablespoons Grand Marnier (see Help Note below)
2 tablespoons sugar
1/4 teaspoon ground nutmeg
Wash and pick over the cranberries. Grind them in a meat grinder using fine blade, or process in a food processor until the cranberries are chopped. Place the cranberries in a large bowl.
Cut the oranges into eighths and grind or process until finely chopped.
Combine the cranberries, oranges, pecans, dried cranberries, maple syrup, Grand Marnier, sugar, and nutmeg. Stir well and refrigerate at least an hour up to 3 or 4 days.
HELP NOTE: A grinder provides a more consistent texture than the food processor. Any orange liqueur is fine.
