SOUTHERN SPOON BREAD
2 cups boiling water
1 cup white corn meal
1 tsp. salt
1 Tbsp. Crisco shortening
1 cup milk
2 eggs, separated
Mix water, corn meal, salt and shortening. Cool.
Add milk and beaten egg yolks; mix well. Fold in stiffly beaten egg whites. Pour into greased baking dish.
Bake in 400 degree F oven 30 to 40 minutes. Serve from dish.
Serves 6 to 8
