Recipe(tried): Lemon Chicken - Thank you Jen in FL

Thank you very much Jen-FL, they all sound yum! I will definetly be trying them out, escpecially The Spanish Chicken :-)
Here is a recipe that I made up as I went along at 11pm one night and my bf loves it.
LEMON CHICKEN.
Chicken breasts (1 per person)
Parsley
Garlic cloves
olive oil
A Lemon
-Make 3 slits in the top of the chicken and place in a oven dish.
-Drizzle olive oil over them and sprinkle a generous helping of parsley.
-Squeeze lots of lemon juice on top and add chuncks of garlic.
-Mix up well (or leave to marinade for a while)
-Put in the oven on medium heat until cooked (I usually find 1/2 hour on Gas mark 6 does it)
VEGETABLES
Red & yellow peppers
Red onion
Baby tomatoes
chunks of garlic
Balsamic vinigar
-Chop all the veg and garlic (quite big chunks)
-Place in an oven dish with a drizzle of olive oil and Balsamic vinigar.
-Cook in oven for same time as chicken.
I usually serve this with home made chips(frys) and homemade garlic bread.
GARLIC BREAD
Butter
Garlic cloves

French bread/ciabatta
-Crush garlic and mix with lots of butter and parsley.
-Grill one side of bread
-Take the bread out and spread the butter mixture quite thickly on the non grilled side
-Put back in and grill until all butter has melted and its nice and crunchy.
You will be stuffed after this feast and smelling of garlic so dont eat it before a hot date!! ha ha!
