Recipe(tried): Poor Man's Fillets, Baked Potatoes, Tomato Broccoli Stack-Ups

1 1/2 lbs ground sirloin
8 strips bacon

Form the ground sirloin into 4, 6 oz. patties (oval shapes if you want them to look a little different than hamburgers). Cook bacon until about halfway done. For 8 strips of bacon, that would be about 4 minutes in my old microwave. If you have a newer one, you might have to decrease that time. Or you can fry them and drain when they are about halfway cooked. Wrap each "fillet" with 2 strips of bacon, holding the strips in place with toothpicks. Grill outdors until cooked to desired degree of doneness.
Serve the "fillets" with your favorite steak sauce, Worcestershire Sauce, ketchup, mustard or whatever you like when you have steak.
Baked Potatoes
1 potato per person
Scrub each potato under cold water with a vegetable brush or wash under cold water. Pat dry. Using a fork, punture the potatoes in several places with a fork. Place them on a paper towel in your microwave and nuke for 4 minutes per potato. (Larger ones may take a bit more time. They should give a little when you squeeze them.) Serve with butter, sour cream and fresh chives, finely chopped. If you don't have a microwave, bake the potatoes in a 350 degree F oven for 1 hour and 15 minutes. If you like the skin soft, rub each potato with some vegetable (canola) oil and wrap in aluminum foil.
Tomato Broccoli Stack-Ups
2 or 3 fresh tomatoes
Salt and pepper to taste
1, 10 oz. package frozen, chopped broccoli
2 green onions with green tops, finely chopped
Mayonnaise (Hellman's or Best Foods brand preferred)
1/2 c. shredded mild cheddar cheese
Preheat oven to 350 degrees F.
Wash tomatoes under cold water and dry. Core the tomatoes and cut in half. Salt and pepper lightly. Place on a baking sheet and set aside.
Cook broccoli according to package directions. Drain well. Add green onions and enough mayonnaise to bind the mixture together - maybe 1/4 to 1/3 of a cup. Add cheese and mix well.
Place broccoli mixture equally on top of each tomato half.
Bake for 20 minutes at 350 degrees F, until tops are lightly brown and broccoli is bubbly. Tomatoes should be hot and slightly cooked but not falling apart.
