Recipe: Lime shrimp - Rocky Mountain Grilled Shrimp

ROCKY MOUNTAIN GRILLED SHRIMP
To turn shrimp easily, use stainless steel, flat-bladed skewers. Round skewers often create large holes, causing the food to slip instead of turn.
Makes 3 servings
2 pounds unpeeled, jumbo fresh shrimp
1/2 cup lime juice
1/3 cup olive oil
2 tablespoons chopped fresh cilantro
1 clove garlic, minced
1 jalapeno pepper, seeded and chopped
1/4 teaspoon salt
1/4 teaspoon pepper
Peel shrimp, leaving tails intact, and devein, if desired.
Combine lime juice and remaining ingredients; pour over shrimp.
Cover and chill 2 hours. Remove shrimp, discarding marinade. Thread shrimp on skewers.
Grill, without grill lid, over medium-hot coals (350 to 400F) 3 minutes on each side or until done.
