Recipe: Shrimp with lime recipes - Char Grilled Ginger-Lime Shrimp, Lime-Broiled Shrimp with Tropical Fruit Relish

Char Grilled Ginger-Lime Shrimp
1 lb Jumbo Shrimp, cleaned with tails on
3 cloves garlic, finely chopped
3 tablespoons of fresh grated ginger
2 tablespoons of lime zest
1/2 cup fresh lime juice
1 cup vegetable oil
1/8 teaspoon cayenne pepper
Pam Cooking Spray for Grills
salt, to taste
In a medium bowl, combine all ingredients except shrimp and mix well; pour mixture into a resealable plastic bag; add shrimp; marinate in refrigerator for about 50 minutes, turning once.
Prepare grill using medium hot coals; spray with Pam Cooking Spray so that shrimp will not stick to grill; place shrimp on grill and brush with marinade; turn after 2 minutes; remove immediately after shrimp turns pink.
Serve with steamed rice and a sweet and dipping sauce of your choice.
Lime-Broiled Shrimp with Tropical Fruit Relish
1/2 teaspoon grated lime zest
3 tablespoons fresh lime juice
2 tablespoons reduced-sodium soy sauce
2 teaspoons light brown sugar
1/8 teaspoon cayenne pepper
1 pound large shrimp, shelled and deveined
2 cups diced pineapple, fresh or canned juice-packed
2 kiwi fruit, peeled and diced
1/2 cup diced jicama or tart, crisp apple
2 tablespoons honey
2 tablespoons chopped cilantro1
In a large bowl, stir together lime zest, 2 tablespoons of lime juice, the soy sauce, brown sugar and cayenne. Add shrimp, tossing to coat, and let marinate while you prepare relish.
In a large bowl, stir together pineapple, kiwi, jicama, honey, cilantro and remaining 1 tablespoon lime juice.
Preheat broiler. Place shrimp on a broiler pan, drizzle marinade over them and broil 5" from heat for five minutes, or until shrimp are just cooked through and browned.
Spoon relish onto four serving plates and place shrimp on top.
