9-23-99 Loaf Pan Recipes: Quick Breads

Dawn/NY (11:53:55) :

Wheat Germ Orange Loaf
Yield: 2 Loaves

2 cups All purpose flour
1 cup Wheat germ
4 tsp Baking powder
1/2 tsp Salt
1/2 cup Brown sugar
1 1/2 cup Milk; I use skim evaporated
2 tbsp Grated orange rind
2 tbsp Orange juice
2 tbsp Butter or margarine, melted

Combine the flour, wheat germ, baking powder, salt and sugar. Add the milk slowly and stir well. Blend in the orange rind, juice and the melted butter. Pour into 2 greased, 4-1/2x8-1/2 inch loaf pans. Bake the loaves for 50 to 60 minutes and cool thoroughly before slicing.

Adapted from The King Arthur Flour 200 Year Anniversary Cookbook. Note the recipe calls for 2 loaf pans; this makes for very short loafs, almost like a biscotti.

Dawn/NY (11:46:16) : Cranberry Bread (not tested)

2 cups flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
2/3 cup fresh orange juice
2 eggs, lightly beaten
3 tablespoons melted butter (sweet)
1/2 cup chopped walnuts
1 1/4 cups cranberries
2 tablespoons grated orange rind

Heat oven to 350. Mix flour, sugar, baking powder, and salt in a largish bowl. Make a hole in the mound into which you pour the orange juice, eggs and butter. Mix but do not overmix. Add walnuts, cranberries and orange rind.

Pour into greased bread pan and bake in middle rack for 45-50 minutes or until a knife inserted into the bread comes out dry. Cool for 10 minutes in pan, then remove (comes out easily!) and cool completely on a rack.

Wrap in foil and let rest for one to two days (you must do this). Then eat. It's great fresh or toasted with butter!

Roz/La. (09:42:03) : Banana Nut Bread

1 1/2 cups flour
1 tsp soda- sifted together
1 cup of nuts (if desired) added to flour mixture
1 1/2 cups sugar
1 stick of butter melted
4 tbsp buttermilk
2 eggs
1 cup (about 3) mashed banana's
1 tsp vanilla

Pour into greased and floured loaf pan and bake in slow oven, testing often in center for doneness.
Note: I double and freeze this recipe all the time and simply dump ingredients into kitchen aid mixer and let it mix for a couple of minutes. It is delicious!!

Dawn,NY (09:38:49) : Strawberry Nut Loaf

2 cups flour
2/3 cup sugar
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 orange
2 tsp butter
1 egg
1 1/2 cups strawberries, fresh
1 cup chopped walnuts

In mixing bowl, stir 1 3/4 c flour, sugar, baking powder, salt and baking soda. Shred peel from orange to measure 3 tsp. Squeeze juice from orange into measuring cup. Add butter and boiling water to measure 3/4 c liquid. Add beaten egg and orange peel to flour mixture. Stir just till dry ingredients are moistened.

In another bowl, toss strawberries, nuts and last 1/4 cup flour. carefully stir into batter. Pour into a greased and floured 8x4x2 inch loaf pan. bake in 350 degree oven for 55 to 60 minutes.

Serve warm with cream cheese.

Dawn,NY (09:32:07) : Blueberry-Lemon Quick Bread

1 tbsp Lemon juice
3/4 cup Milk
1 Egg, beaten
1/4 cup Vegetable oil
1/4 cup Molasses
1 1/2 cups AP flour
1/3 cup Packed brown sugar
1 1/2 tsp Grated lemon rind
1 1/2 tsp Baking powder
1/2 tsp Baking soda
1 cup Blueberries (fresh or frozen)

In bowl, stir lemon juice into milk. Let stand 1 minute to sour. Stir in egg, oil and molasses.

In large bowl, combine flour, sugar, lemon rind, baking powder and baking soda. Add milk mixture and blueberries, mixing just until combined.

Pour into greased and floured loaf pan. Bake in 375 degree F oven for 35-40 minutes or until firm to the touch.
