Recipe: Lobster Stew-New England Style

Lobster Stew

Ingredients (9 servings)

PHILLY.INQUIRER:
1/2 c BUTTER
1 qt LIGHT CREAM
1 ts PAPRIKA
SALT AND FRESHLY GROUND PEP
1 pn NUTMEG
2 tb WORCESTERSHIRE SAUCE
1 lb COOKED LOBSTER MEAT
2 tb DRY SHERRY AT LEAST
1 qt MILK

Instructions

MELT THE BUTTER IN A HEAVY POT;ADD THE PAPRIKA,NUTMEG,AND
LOBSTER.COOK SLOWLY FOR TEN MINUTES.HEAT THE MILK AND
CREAM,( DO NOT BOIL) AND ADD TO LOBSTER. SEASON TO TASTE WITH SALT
AND PEPPER AND WORCESTERSHIRE SAUCE. ADD SHERRY TO TASTE JUST
BEFORE SERVING. MAKES EIGHT TO TEN SERVINGS.

LOBSTER STEW

Yield: 4 servings

1 1/4 lb Lobster, boiled
5 c Milk
1/2 c Heavy cream
1 pn White pepper
4 T Butter
1 t Salt

Remove meat from lobster body and claws. Cube. Scald milk with lobster
shells in it. Discard shells.
Slightly saute' lobster in butter; add the milk and bring back to
boil.
Remove from heat, add cream, season to taste and serve.

LOBSTER STEW

1/4 cup butter
Meat from 1 or 2 Fresh Nova Scotia Hardshell Lobster

In a large saucepan, heat butter until foamy. Add lobster meat and cook until pink.
Remove meat from pan and set aside.

1 onion, finely chopped
1/4 tsp. pepper
2 cups boiling water
2 cups chopped raw potatoes
1 tsp. salt
1/2 tsp. salt
2 cups milk

Add onions to remaining butter in pan and cook until transparent. Stir in water, 1 tsp. salt and potatoes. Bring to a boil, cover and simmer for about 5 minutes or until potatoes are tender. Stir in lobster, milk, 1/2 tsp. salt and pepper. Heat thoroughly, but do not boil. Pour into individual serving bowls.
