SPICY GRILLED CATFISH
2 tbsp lime juice
1/2 cup Chardonnay wine
1 tbsp dry mustard
1 tbsp chili powder
1 tsp ground black pepper
1/4 cup minced fresh cilantro
1/4 tsp salt (or to taste)
1 lb catfish fillets
1 tbsp olive oil
Combine juice, wine, mustard, chili powder, pepper, salt and cilantro. Marinate the fish for 15 minutes.
Drain fish and set aside; pour marinade into a saucepan. Boil marinade for a few minutes.
Lightly oil grill or broiler rack and prepare for cooking.
Broil or grill about four inches from heat for about five minutes per side or until fish flakes. Baste with marinade while cooking.
Makes 4 servings
