Mampostial
(coconut candy from Puerto Rico)

1 1/2 cups shredded coconut (pressed down. the resulting coconut milk can be reserved for other dishes))
1 1/2 cups sugarcane syrop
1/2 tsp. vanilla

Mix all ingredients together in a caldarero (it is like a dutch oven but made of cast iron) and cook over medium heat, stirring constantly until the mixture forms a ball and separates from the sides of the caldero. Remove from heat and spread on a greased cookie sheet. Let it cool and slice squares.
