ISO: Can Splenda be used in the Mampostial (Coconut Candy from PR)

Hello All,

I have just found a recipe here for the coconut candy, my father use to get it when he would go home to puerto rico but he has not been home in a very long time. He called me the other night at midnight to tell me he wants coconut candy that he use to get at home (yeah I know goofy old man :)god love him. My problem is that he is diabetic and wants to try this recipe with splenda does anyone know if it is possible? Any thing to keep my dad happy and as long as he's chewing he's quiet lol
