This is very good mango salsa

1 large mango, peeeled, seeded and chopped
1 large cucumber, peeled, seeded and chopped
1 large jalapeno pepper, seeded and chopped
1/4 cup chopped red onion
1 teaspoon grated gingerroot
1 tablespoons fresh chopped basil
1 tablespoon rice wine vinegar
1 tablespoon balsamic vinegar
1 1/2 teaspoons olive oil
combine all ingredients in a bowl and stirr well. Makes 3 cups.

This is a recipe for apricot bars but I have used dried mangso and it is vrey good.

2/3 cup dried fruit
1/2 cup soft butter
1 1/4 cups sugar
1 1/3 cups sifted flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup light brown sugar, packed
2 eggs, well beaten
1/2 teaspoon brandy or vanilla flavoring
1/2 cup chopped walnuts
Cover fruit with water and boil 10 minutes. Drain, cool and chop. Mix soft butter with sugar and 1 cup of the flour until crumbly. pack into layer covering bottom of greased 8 inch square pan. Bake at 350 for 25 minutes. Sift remaining 1/3 cup flour with baking powder and salt. Beat brown sugar slowly into eggs, beating well after each addition. Stir in flour mixture, flavoring, walnuts and fruit. Spreaad over baked layer. Return to oven bake 30 minutes. cool in pan and cut in bars when cooled. May sprinkle with powdered sugar while still warm.

How about drying them?

The following recipes are from a local Hawaiian cookbook I got there 20+ years ago. The first bread is the only recipe I have tried and I was pleased with it.

mango Nut Bread
3 1/2 cups all purpose flou
4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 stick plus 1/4 stick soft butter
4 eggs
3 cups mango pulp
1 tablespoon lemon juice
1 cup choopped nuts
1 teaspoon vanilla
Sift together flour, baking powder, soda, salt and set aside. Blend butter until creamy, add sugar and beat until fluffy. Add eggs, one at a time and beat after each addition. Peel mangoes and slices. measure to 3 cups add lemon juice and mash well. Add to creamed mixture. Beat by hand alternately with flour and mix but don't overbeat. Mix in nuts and vanilla. Pour into 2 greased loaf pans. Bake 350 for 1 hour. cool before slicing.

Deluxe Mango Bread
2 cups flour
2teaspoons cinnamon
2 teaspoons baking soda
1 1/2 cup sugar
1/2 teaspoon salt
3 eggs, slightly beaten
1 teaspoons vanilla
1 cup salad oil
2 cups diced mango
1/2 cup chopped walnuts
1/2 cup coconut
1/2 cup raisins
Sift together the flour, cinnamon, soda, sugar and salt. Add the flour mixiture to the rest of the ingredients which have been well mixed. Grease 4 2 1/2x5 inch loaf pans and fill 3/4 full and bake 55 minutes at 350.

Mango Upside Down Cake
1/3 cup butter
1 pint firm ripe mango slices
1/4 cup shortening
1 egg
1 1/4 teaspoon baking powder
1/3 cup milk
2/3 cup brown sugar
1/2 cup sugar
1 cup cake flour
1/8 teaspoon salt
1/2 teaspoon vanilla
Melt butter and sugar in 8 inch round cake pan. Place mango slices over the mix. Cream shortening and sugar. Add egg and beat thoroughly. Sift together flour, baking powder and salt and add alternately with combined milk and vanilla to the creamed mixture. Pour over the mangoes and bake at 375 degrees for 35-40 minutes. Serve plain or with whipped cream.

Mango Pie
3/4 cup sugar
2 tablespoons flour
1 teaspoon cinnamon
2 tablespoons lemon juice
3-4 cups sliced half ripe mangoes
1 tablespoon butter
Pastry for 2 crust pie

Combine sugar, flour, cinnamon and lemon juice. Mix with mango slices and fill pastry lined pie pan. dot with butter and cover with top crust; seal edges and cut vents intop of crust to allow steam to escape. Bake 425 for 45 minutes. One 9 inch pie
