RE: mango overload

I saw this on a cookery show over here yesterday.

The chef had pan fried some duck breast and he madea mango sauce to go with it. All he did was to chop up a whole mango and saute it ina little bit of light oil and then let it simmer with 4 cardamom pods and some ginger in it. Then took the cardamom out when he served it. It looked lovely!

You could try making a spicy mango chutney too...I'll look up the recipe for you if you want it. Got it here somewhere!

have fun with the mangoes and remember...the best place to eat a ripe mango is in the bath...makes cleaning up so much easier!
