Mango Recipes for Julie!

Hi, Julie,

I live in "mango country" - grew up here as a matter of fact, and so have a number of old Florida mango recipes. You mentioned the pool and the heat, so how about:

MANGO DAIQUIRI

1/3 of a fully ripe medium mango
1/3 cup fresh lime juice
3 Tbs sugar
1/3 cup rum
4 cups crushed ice

Put several small pieces of peeled mango into blender container. Add remaining ingredients; cover blender container and blend smooth.

or

MANGO MADNESS
(Makes 4 servings)

1 to 2 mangos, peeled and sliced
1 scoop orange, lemon or lime sherbet
1 cup milk
Extra sherbet

In bowl of electric mixer or in blender container combine mangos, scoop of sherbet, and milk; blend smooth. Pour into glasses and top with extra scoop of sherbet.

As a last resort, you can always

FREEZE MANGOS

The easiest way to freeze mangos is to slice and layer on a cookie sheet; freeze; then place them in sealed plastic bags and store in freezer. Slices will stay separate.
