Recipe: Mango Soup (cold soup)

Mango Soup (cold soup)
Serves 4-6

1 mango, peeled and cut in chunks
3 star fruit, 2 cut into small pieces and 1 sliced for garnish
1/8 medium pineapple, peeled
4 oz fizzy lemon-lime soda
3 ounces apricot nectar
2 tbsp. lime juice
1 tsp pinneaple extract
fresh mint leaves as a garnish

In a blender or food processor, puree mango, star fruit and pineapple until smooth.

With motor running add soda, apricot nectar, lime juice and pineapple extract. Process until blended.

Cover and chill until ready to serve. Garnish with a star fruit slice & mint leaves.
