Recipe(tried): Mango Butter Log

This butter can also be made with ripe peaches or pinneaple, pureed together. Can be used over toasted bread or to saute fish filets or chicken breasts. It is great with shrimps and scallops.

Mango Butter Log

8 oz. butter softened
8 oz. peeled ripe mango, pureed
2 tsp lime juice
2 tb. finely chopped fresh mint
1 tsp grated nutmeg

When butter is at room temperature, beat all ingredients in bowl. Transfer mixture in the shape of a 12 inch log onto a piece of freezer paper or plastic wrap & roll up, twisting the ends of the paper like a party popper to seal. Refrigerate until firm or freeze.

Yields about 1 dozen 1 tsp. pats.
