Recipe(tried): Manicotti Stuffing Tips

Menus

Hi Page,

You made me remember that it's been a while seen I've done manicotti! Very tedious dish!

The last time I made manicotti I had just finished a cake decorating course, and decided to use my plastic decorating bag. The trouble is now I don't recall if I used the coupling alone, or used nothing (just the bag), or a large round tip. Hmmm! Probably a large ziplock bag with a corner cut out could be improvised, too. I might try it that way next time.

The SECOND time I ever did manicotti (first time, of course I tried to do it perfectly, the "right" way), I'm fairly certain I slit each manicotti open and stuffed them that way. The temptation here is to overstuff, and if you do, your secret is out along with the filling! But anyway, after stuffing, I put each manicotti slit-side down in the baking dish and continued with the recipe.

I find the long-handled iced tea spoon stuffing method very tedious, but I guess I might be able to cope with it once in a while. (Sure, sure!)

Don't own a cookie press, so I wouldn't be able to advise you there. I am always willing to try a new method, though, so if you try this, please do tell us how well it works!

P.S. My favorite secret is that I will often turn a manicotti recipe into say, a pasta ruffles (my husband's favorite) recipe! Just mix pasta with sauce, layer with the manicotti filling, and top with another layer of pasta/sauce! Still tastes great!
