Recipe: Special Salmon Patties (using carrot, zucchini, onion and soft bread crumbs)

SPECIAL SALMON CAKES

1 small zucchini, finely chopped
1 cup finely chopped carrot
1 (7 3/4 oz.) can salmon, drained and flaked
1 1/2 cups soft white bread crumbs (or cut in small cubes)
1 egg
2 tsp. grated onion
1/4 tsp. salt
1/8 tsp. ground black pepper
2 tbsp. oil (for frying)
FOR THE TOPPING:
3 tbsp. mayonnaise
3/4 tsp. prepared mustard
Lemon wedges (optional, for serving)

Pat zucchini and carrots dry with paper towels. Mix with salmon, bread, egg, onion, salt and pepper, shape into round cakes/patties.

Brown in skillet with salad oil until nicely browned on both sides, 8 to 10 minutes.

Serve with topping made by mixing mayonnaise and mustard. Serve with lemon wedges, if desired.
