Recipe: Marinated Chicken Wings with Blackberry Barbecue Sauce (using preserves)

MARINATED CHICKEN WINGS WITH BLACKBERRY BARBECUE SAUCE

1/2 cup blackberry preserves
1 cup ketchup
1/4 tsp. cayenne pepper
1 tsp. dry mustard powder
1/4 cup red wine vinegar
2 lbs. chicken wings

Preheat grill.

In a medium-size mixing bowl, stir together blackberry preserves, ketchup, cayenne pepper, mustard powder and vinegar. Divide mixture in half; reserve one portion for dipping sauce.

On a clean cutting board, using a sharp knife, cut off tips of wings and discard. Cut each chicken wing in half at the joint.

Place wings on preheated grill and cook 10-15 minutes; brush wings with half portion of the sauce during the last 5 minutes of cooking.

Serve wings with reserved sauce.

Makes 6 servings
