This is a wonderful pie, with a very different and interesting flavor. I found the recipe in an old holiday recipe booklet from Domino Brownulated Brown Sugar. Out of curiosity I did a little research and discovered that Marlborough Pie was probably served at the first Thanksgiving, and was an original Thanksgiving traditional pie.
MARLBOROUGH PIE

Makes one 9-inch pie.
1 cup applesauce
3 tablespoons lemon juice
1 teaspoon grated lemon peel
1 cup Brownulated Brown Sugar* (or substitute, see note)
4 eggs -- slightly beaten
2 tablespoons butter or margarine -- melted
1/2 teaspoon salt
1 (9 inch) pie crust (lightly baked)
Combine all ingredients except pie crust. Blend well. Pour into shell.
Bake at 450 for 15 minutes. Reduce heat to 350 and bake 15 minutes longer, or until knife inserted halfway between center and edge comes out clean. To avoid the crust browning too much, cover edges with tin foil and remove 10 minutes before pie is done. Cool on wire rack. If desired, garnish with sweetened whipped cream.
*Brownulated brown sugar is brown sugar that is the consistency of granulated and is made by Domino. To substitute regular light brown sugar, use 1 cup minus 2 tablespoons packed brown sugar and 2 tablespoons granulated white sugar.
