Mashed Potato Salad
4 to 5 large potatoes
1/2 cup cream
2 large spoons mayonnaise
3 large eggs, hard boiled
2 heaping teaspoons mustard
1 medium onion, finely chopped
Salt and pepper to taste
Peel potatoes, cube in large pieces and cook until soft.
Drain well and mash as for mashed potatoes. (I like to have them a little "lumpy"). Set aside.
Chop eggs and onions
Add cream, mayonnaise and mustard to potatoes and stir in eggs and onions.
Add salt and pepper to taste.
This may be served hot or cold.
Hope this is close to what you are looking for..Its the way my mother made her potato salad.
