I use leftover mashed potatoes to make this. I add the same ingredients that I would add to a regular potato salad (onions, eggs, mustard, mayonnaise, pickles, celery, radishes, etc.- whatever you like).
The first time my southern sister-in-law handed me a bowl of mashed potatoes and said "You can make the salad" I freaked! My Mom always made it with cubed potatoes and I had NO idea how to do it with mashed potatoes. Everyone had quite a laugh. When she told me what to do I realized that the only difference was the texture of the potatoes. Now I never make it with cubed potatoes. For some reason it seems to have more flavor with the mashed.
