ISO: What do do with leftover pot roast

I made a pot roast in the crockpot last night and have leftovers. Unfortunately, I have more vegetables than roast leftover. In fact I wouldn't even consider any meat leftover at all... What can I make tonight to use up the veggies and broth? My husband simply must have meat with his dinner.
