Recipe(tried): Uses for leftover pot roast

Main Dishes - Beef and Other Meats
Dani - a couple of ideas come to mind.

You can make soup with it and then top it with a crouton and lots of cheese like onion soup is done. Maybe the cheese will take the place of more meat?

Or, maybe a pot pie (the crust might hide the missing meat!) or make it into a shephard's pie tyope dish with mashed potatoes instead of pie crust.
