Recipe: Mediterranean Fish Rolls (Rollini de Pesce) (Hunt's Tomato Paste, Let's Cook Italian)

2 lbs. fillets of flounder, sole or perch
Juice of 1/2 lemon
Salt and pepper
1/4 cup chopped onion
1 clove garlic, minced
2 tablespoon olive or salad oil
1 (6 oz.) can Hunt's Tomato Paste
1 1/2 cups water
1/2 teaspoon Salt
1/4 teaspoon ground black pepper
1/4 teaspoon oregano
1/4 cup dry white vine (optional)
Cut fillets in hail lengthwise. Sprinkle with lemon juice, salt and pepper. Roll up and fasten with toothpick. Place in greased baking dish (about 10 x 6 x 2 inches).
In a skillet, cook onion and garlic in oil until soft.
Add Hunt's Tomato Paste mixed with water, salt, pepper and oregano. Simmer uncovered 20 minutes.
Add wine and pour over fish.
Bake in moderate oven (375 degrees F) 35 minutes, or until fish flakes easily. Baste occasionally.
