MEDITERRANEAN STRATA
"A strata is a a dish that is typically made by layering ingredients and then baking. It is often made of eggs, bread, cheese and combinations of other ingredients. Strata's can be a breakfast dish, a main dish or even a side dish."
2 pounds green zucchini or yellow squash, cut into 1/4-inch slices
2 tablespoons water
1 cup ricotta cheese
3 eggs
1 1/2 cups milk, heavy cream or half and half
1 cup minced fresh basil (2 bunches)
2 tablespoons all-purpose flour
1 tablespoon minced garlic
1 cup shredded mozzarella cheese
1 1/3 cups French fried onions
diced red bell pepper (optional, for garnish)
Preheat oven to 350 degrees F.
Place zucchini and 2 tablespoons water into 2-quart microwave-safe baking dish. Cover with vented plastic wrap. Microwave on HIGH 3 minutes or until just tender; drain well.
Whisk together ricotta cheese, eggs, milk, basil, flour, garlic and 1/2 teaspoon salt in large bowl. Pour over zucchini in baking dish. Sprinkle with cheese.
Bake, uncovered, in preheated 350 degree F oven for 45 minutes or until custard is just set. Sprinkle with mozzarella cheese and French fried onions. Bake 5 minutes or until onions are golden.
Garnish with diced red bell pepper, if desired.
Makes 6 servings
