Recipe: Mediterranean Tuna Salad

MEDITERRANEAN TUNA SALAD

2 packages (8 oz. each) fusilli, cooked according to package directions
3 cans (6 1/2 oz. each) water packed tuna, drained and flaked
1/2 lb. low-fat dill havarti cheese, cut into 1/2-inch cubes
1 (8 oz.) bottle Italian salad dressing
1 cup thinly sliced scallions, including green tops
1/2 cup pitted black olives, thinly sliced
1/2 cup finely chopped red bell pepper
1/2 cup thinly sliced green bell pepper
zest from 1 lemon
TO SERVE:
8 lettuce leaves, washed and patted dry
black pitted olives (for garnish)

Combine all ingredients in a large bowl. Toss to combine. Let stand for 15 minutes.

Serve on a lettuce leaf. Garnish with olives, if desired.
