Recipe: Melon Bubbles (Jell-O gelatin recipe)

MELON BUBBLES

1 package (4-serving size) Jell-O Brand Gelatin, any flavor
3/4 cup boiling water
1/2 cup cold water
Ice cubes
1 cup melon balls (cantaloupe, honeydew or watermelon)
Mint leaves (optional, for garnish)

Dissolve gelatin in 3/4 cup boiling water.

Combine 1/2 cup cold water and ice cubes to make 1 1/4 cups. Add to dissolved gelatin, stirring until slightly thickened. Remove any unmelted ice.

Measure 1 1/3 cups gelatin into small bowl; add melon balls. Pour into individual dessert glasses or serving bowl.

Whip remaining gelatin at high speed of electric mixer until fluffy, thick and about doubled in volume. Spoon over gelatin in glasses.

Chill until set, about 2 hours.

TO SERVE:
Garnish with additional melon balls and mint leaves, if desired.

Makes 6 to 8 servings (about 1/2-cup each)
