Recipe(tried): Meringue for Meat Pie
Misc.My Mom always made her meat crust pie with leftover mashed potato meringue.
Make you favorite meatloaf recipe and pat into a pan like you are forming a crust for a pie. Bake at 400 until almost done about 20 mins. Drain off the fat and fill with canned mixed vegetables (She always used VegAll), drained and stewed tomatoes. Put mashed potatos in a pan and heat with enough milk to make a smooth texture. (This was before the days of the Microwave ovens) Spoon over vegies and seal to the edges of the meat crust and return to the oven to heat through and brown the ridges of the potatos.
Serve with a nice salad (She likes to just cut the head of iceberg lettuce in wedges and pour the dressing over the top) and you have a full meal.
This is comfort food for me. Especially, if I make her favorite dressing, Miracle Whip thinned with milk until pourable.
